Protein Sweet Potato Brownies

Ingredients

  • 1 1/2 cups Mashed Sweet Potato
  • 1/2 cup Almond Butter
  • 1/2 cup SF Maple Syrup
  • 35g Chocolate Protein Powder
  • 1/4 cup Cocoa
  • 1/4 tsp Baking Powder & Soda
  • 1 tbsp Oil
  • 1 tsp Vanilla Essence
  • Pinch of Salt
  • 1/2 cup Chocolate Chips

Method

Mix all ingredients in a bowl except for cocoa, vanilla and choc chips.

Mix cocoa powder with 1/4 cup boiling water until a chocolate sauce if formed (don’t bother tasting it, it will be bitter!)

Add cocoa sauce, and vanilla to the batter and stir. Stir in chocolate chips.

Bake @185 for 30 minutes, wait until cooled before slicing.

Storage

Store in the fridge for up to 5 days, or freeze for up to 3 months.
