Chilli Con Carne
- 500g Beef Mince
- 1 can Italian Diced Tomatos
- 1 can Mexican Bean Mix
- 100g Creamed Corn
- 2 tsp Chilli Con Carne Spice Mix
Chilli Con Carne
Cook mince in a medium pan on low heat – no oil is needed as the mince produces enough as it cooks.
Once the mince is browned, add the spice mix and cook down for 2 minutes.
Add tomatoes, beans, corn and cook for 10 minutes covered, stirring occasionally.
If the mixture becomes dry, add 1/4 cup water as needed.
Serves Well With
Rice
- 1 cup Basmati rice
- 1.5 cups water
Bring the rice to a simmer on medium high heat with 1.5 cups of water and a pinch of salt. Once the surface starts to foam and bubble, bring the temperature down to a medium low heat and cook covered for 10 minutes.
Let the rice sit for 5 minutes before fluffing.
Additional Toppings
Serves well with sour cream or Greek yoghurt, and vegetables of your choice (tomatoes, onion, avocado).
Storage
Store in the fridge for up to 3 days or freeze for up to 3 months.
